caterpillar rolls
The caterpillar roll is becoming a fairly popular item. It usually contains eel and sometimes has a vegetable filling in addition, and is topped with avocado slices. Here's the step by step on how to make it.

Start by cutting your avocado in half, discarding the pit.

Peel the avocado, and slice as thinly as you can. While you would normally slice lengthwise for maki filling, this time slice by width instead of length.

Your pieces should be this thin. Try to get them as thin as you can, so long as you can still pick it up and move it without it falling apart.

Now begin by making an inside-out roll, just like you would any other inside-out roll.

Add your wasabi, if desired.

I've added cucumber and eel here. I bought a whole precooked eel and sliced it into strips. Proceed to roll the sushi just like you would any other inside-out roll.

Next, lay your slices of avocado on top of the roll like you see in this picture.

Carefully wrap the roll in plastic wrap and apply enough pressure to form the avocado to the roll.

Slice the roll in half, and lay the halves next to each other.

Now slice the roll into sixths and carefully remove the plastic wrap.

Here's the finished roll. You can put grapes on toothpicks and place them in the "head" to make it look like a real caterpillar if you want. Or, you can eat it.
