Hand rolls really are fairly simple once you've done one. They're quick and easy, and here's how to make them.

Start with a half-sheet of nori.
Place a small handful of rice on one side. Don't spread it out like you would if you were making a normal roll. Apply wasabi if desired.
Place your filling diagonally across the rice, pointing to the corner.
Begin by folding the corner around the rice and the filling as shown in the picture here.
With the first fold tucked in, begin to roll the long part of the nori around the rice and filling.
Continue rolling until you reach the end of the nori. If the nori won't seal itself, use a small amount of tezu or water to seal it.
